 An evening of award winning dining with wine pairing

 Indulge in an immersive evening of food and wine in the luxurious surrounds of Faithlegg. Tailored toward wine enthusiasts and gourmands, the evening promises to excite and delight those who attend. Experience the craftsmanship of wines presented by Simon Tyrell in a guided tasting paired with a 7 course tasting menu curated by Executive Chef Jenny Flynn.

The evening will begin with arrival drinks and canapes in the bespoke Bar 1783. Followed by dinner and a guided tasting in The Boardroom. The meal will be paired with wines, carefully chosen to enhance the flavours of the dishes and to celebrate the local produce and organic ingredients at the heart of Faithlegg’s food offering. This celebration of fine foods and expertly crafted wines in the opulent surrounds of Faithlegg is not to be missed.

Simon Tyrrell 

Of ‘Les Deux Cols’ , ‘Atelier des Sources’ , ‘Oludeo’ and more recently ‘Maison Tymas’

Simon spent many years running his own distribution business, specialising in wines from the Rhône Valley before changing direction in 2009, undertaking viticulture  and oenology studies at Plumpton College ,University of Brighton in the UK. His harvest experience was spent at Domaine Stéphane Ogier and Château Terre Forte. When not in the Vineyards or at the Winery Simon works closely with the Tindal Wine Merchants team and helps imparting his knowledge to them and to the our customers countrywide. Today Simon is currently in the vineyards with one last big push to get the last grapes in this week (1st week of October). His Estates: 

LES DEUX COLS ,  GARD, RHÔNE VALLEY

An eight-hectare property founded in 2016. Organically farmed vineyards are aged between 30-70 years old and situated in the hills above the village of Saint Gervais in the northern part of the Gard. The altitude, sandy soils, surrounding forests and exposure to the Mistral, help bring freshness to the grapes. In the cellar, the approach depends on the parcels and the vintage with full crushing and de-stemming for some plots and partial de-stemming for others. Only indigenous yeasts are used and alcoholic fermentation is done in stainless steel tanks and generally below 25˚. Ageing takes place in tank for Alizé and demi-muid and 228 litre barrels for Trois Terroirs and Chemin des Fonts.

ATELIERS DES SOURCES , GARD, RHÔNE VALLEY

This micro-négociant business is run by Simon Tyrrell, and Thomas Schmittel of Domaine des Lises in Crozes-Hermitage. Using their deep knowledge of the Rhône Valley and Languedoc, they source high quality grapes from what they regard as exceptional vineyard sites. The team consult regularly with their growers throughout the year and harvesting is done by the Atelier team. The grapes are transported to the Deux Cols winery where the red wines are fermented in stainless steel with further ageing in Burgundy barrels and 600 litre demi-muids. Their white is both fermented and aged in demi-muid.

OLUEDO  , MADRID , SPAIN 

Oludeo is a wine making project exclusively with Tindal Wine Merchants and made under the guidance of Simon focussing on two high altitude regions in Spain. The first wines were made in Yecla, in the valley that lies northwest of Alicante in eastern Spain where the climate and mixture of soils provide excellent conditions for growing Monastrell based wines. Altitudes from 535-800 metres above sea level contribute to significant diurnal variation, helping greatly with berry development and acid retention. The second part of the project concentrates on the mountainous Sierra de Gredos, to the west of Madrid. Here, the friable granite soils and altitude help produce Grenache based reds that have both elegance and freshness. In both areas, the grapes are hand harvested, partially crushed and de-stemmed and fermented at cool temperatures. Ageing takes place in 500 and 600 litre French oak demi-muids.

MAISON TYMAS ,  SOUTHERN RHÔNE

This young, micro-négociant business was set up in 2022 to focus on the production of small volume, high quality but affordable wines made from old vine vineyards and unique sites in the South of France. The sourcing of the high-quality raw materials has been led by Caroline Delmas, a brilliant, young winemaker from the Southern Rhône. Caroline became a consulting oenologist after studying in Montpellier and gaining vintage experience at Leeuwin Estate in Western Australia, Giaconda in Victoria, Quintessence in the Napa Valley and Anne de Joyeuse in Limoux. Today, she advises some of the most renowned estates in the Southern Rhône.
